Need to Eat in a Pinch?

Posted in , ,

This morning I decided to try this one quick meal. I prepared a honey yogurt with raspberries and almonds. I mixed it with 1 tablespoon honey with 6-ounce container plain low fat yogurt then top with 1 cup unsweetened frozen rasberries abd 2 tablespoons chopped almonds. With this meal you will only got 300 calories. Pretty small right and it's healthy and yummy!

For lunch I decided to have broiled salmon and asparagus with quinoa. I found this recipe on one of the Health Magazine that I read. I want to share it with you how to do it. You need to preheat your broiler then broil 10 asparagus spears and 4 ounce salmon filet until it turns opaque or until internal temperature reaches 145 degrees. In a separate pot, bring 1/2 cup quinoa; cover and simmer for 12 minutes. Drizzle everything with juice from half a lemon, and sprinkle with 2 tablespoons fresh chopped parshley, salt, and pepper to taste.

I'm still thinking what to have for dinner. :) Maybe a sauteed shrimp and broccoli with brown rice!
