Angel Hair Pasta with Parmesan Cheese

Pasta is one of my husband’s favorite foods, so I decided to make it today for dinner. These are the ingredients that I had: eight ounces angel hair pasta (cooked), eight large eggs (beaten), four large garlic gloves (minced), two tablespoons olive oil, six ounces soft goat cheese, two tablespoon balsamic vinegar, one cup frozen peas (thawed and cooked), three tablespoons parmesan cheese, and one-fourth cup basil (chopped).

Preheat broiler. Combine angel hair pasta, eggs, and garlic, and season with salt and pepper, heat 1 tablespoon of oil in a cast iron skillet, add pasta mixture, and spread evenly. Reduce heat to medium and cook 6 minutes. Cover and cook 4 minutes until mixture is set. Transfer skillet to broiler and broil 3 minutes until top is golden. Sprinkle with goat cheese and broil 2 minutes more until cheese softens. Serve the pasta on a platter.

For toppings, simply combine vinegar, olive oil, peas, and basil, and season to taste. Sprinkle this mixture with the pasta and add parmesan cheese. Viola!!! this is now ready to serve.
