My lunch for the Day

My BI Training just started this Monday. It was a little tiring, so much information that need to be digested. But anyway even though I have only 1 hour break for lunch at least I still have time to cook the salmon with mustard. I started thawing the fish the night before. These are what I had 4 salmon fillets, Dijon mustard, to cover, ½ cup olive, ½ cup seasoned bread crumbs.

With you fist, pound each salmon fillet between sheets of plastic wrap. Remove the wrap and spread mustard on both sides of the salmon. Heat a small amount of olive oil in a saucepan on high heat. Dip the fish in the seasoned bread crumbs and cook in the olive oil 5 to 10 minutes on each side, just enough to sear in the flavor. This is what I like in fish fillet because you only need a little time to cook it. Just try this healthy recipe and for sure you will like it, since I do.
