Barley Soup with Red Wine

For a change, I made a soup this morning before my BI Training started. This is so easy and quick to do. If you want to try this, you need the following ingredients, 1/2 rasher of bacon(3 slices), 2 tablespoons of olive oil, 2 large onion (chopped), 1 teaspoon garlic, 1 cup barley, 2 tablespoon parsley, 1/2 cup red wine, 4 teaspoon sour cream, 2 quarts beef stock.

Cook bacon in a pan. Drain, crumble and set aside. Saute chopped onions and garlic in olive oil in a pot. Add beef stock to pot. Boil barley separately, drain and set aside. Add parsley to boiling broth. Add bacon, barley and red wine; simmer for 10 minutes. I served it with a dollop of sour cream in each bowl(optional). This yummy soup filled me up and a good start to perk me before my training start. Hope you will like it as I did!
