Chicken Casserole for Breakfast

This morning I thought of making chicken casserole to perk up my day before my training will start. I remember my mother, she likes to cook this early in the morning. I just modify her ingredients and added more of it. Here’s the ingredients that I used.. two large chicken breast, cooked and diced, one can cream of chicken soup, three fourth cup sour cream, one cup cooked rice, one cup celery, diced and parboiled, one teaspoon onion, grated, one tablespoon lemon juice, one-half teaspoon sale, one-half cup cashes nuts chopped (optional), thee-forth cup bread crumbs or corn flakes crumbs.

Actually, the preparation was pretty simple. I mixed the chicken, soup, sour cream, rice, celery, onion, lemon juice, and salt. I put the mixture in buttered casserole and refrigerate it for 30 minutes. Then I placed the casserole in the preheated oven at 350F for one hour. Topped it with cashes and corn flakes. This serving is only good for four people, if you want more, you can double it.
