Filipino Style Beef Chunk Roast Adobo

It is almost a month now that I never posted here in my blog site. Sorry guys, I got so busy lately with lots of stuff. Today, I want to share with you the beef chunk roast adobo that I cooked in Crockpot yesterday. I used the following ingredients:

• 4 lbs beef chuck roast,
• 5-6 medium sized potatoes, diced
• ½ cup soy sauce
• ½ cup apple cider vinegar
• ¼ cup water
• 4 bay leaves
• 1 tablespoon peppercorn
• 2 small sized onions, sliced
• 4 garlic cloves, crushed
• 2 tablespoons sugar

This is so easy to prepare and no need for you to marinate it to make it tasty. I soaked the frozen meat in cold water for about 30 minutes to 1 hour and put it in crock pot since I don’t have time to wait until the meat is fully defrosted. I mixed everything except the diced potatoes. I cooked it in high in crock pot for about 4 hours then I put the diced potatoes and cooked it for another 1 ½ hour. I cut the meat into chunks after 4 hours of cooking, then, throw it back to the Crockpot together with the diced potatoes. The meat came out so savory and tender. Yum! Yum! Yum! Don’t forget to serve it with rice. Happy eating!
