Spanish Fries

Posted in ,

I tried this simple spanish fries, just need a bit of practice to make it perfect. After making it twice, I finally did it correctly.

Here's the ingredients that you needed if you want to try it.

2 pounds of russet potatoes
2 1/2 cups peanut oil
2 jalapeno peppers, seeded and sliced
1 onion sliced
Salt to taste

Some prefer not to peel the potatoes, but I preferred a peeled one. I cut the peeled potatoes into 1/2 inch sticks. Rinse and then pat dry the potatoes. Pour 2 1/3 cups of peanut oil into a 12-inch skillet. Add the potatoes to the cold oil, packing them in tight until the oil almost covers them.

Turn the heat to medium and fry until potatoes turn pale golden. As they cook, shake the pan to keep the potatoes from sticking, After 10 minutes, quit shaking and cook for another 8-10 minutes. Add the jalapeno peppers. Wait 3 minutes and add a handful of sliced onions.

When the potatoes turn gold, increase the heat to medium-high and fry, constantly moving them around to ensure even browning. Drain and place on a wilre rack. Sprinkle with salt.
